Day 49, Meal 116

Today is the BIG DAY! It’s time for Meal 116, the one that passes the prior record held since 2014, from #PastaPreacher Alan Martin. I took a road trip from Inverness, FL to Burlington, NC, 600+ miles away (1,200 round trip) to have a nice meal together while passing his record at the same time. On Friday, it was time to throw on my 8 Weeks of Pasta shirt… … and hit the road: I stopped at locations along the way in Georgia, South Carolina and finally ending up in North Carolina, where I met up with an old Army […]

Day 63, Meal 150

Today was the BIG day, my 1st ever Marathon, 26.2 glorious miles of fun (and PAIN), at the Space Coast Marathon in Cocoa, FL over by the Kennedy Space Center, as this entire Marathon was Space Themed. I was ill-prepared, and definitely not qualified to be running a marathon, as I haven’t really done any training, but I still committed to running it today. The longest I’ve run this year was over at the Peachtree 10k back in July, which is only 6.2 miles… That means today, I would have ran 20 MORE miles than my LONGEST run. Ouch. And […]

Day 62, Meal 149

I’ve arrived in Cocoa, FL and just got back from the Space Coast Marathon Expo to grab my race shirt and bib, and took a quick selfie in front of the Astronaut prop: I almost NEVER wear a new race shirt, as I have learned when it comes do running, do NOTHING new on race day. I had to try it on though: I almost never wear long-sleeve shirts, as I live in FL, but it’s a nice addition to the race shirt collection. I also checked out the bling and merch for one of my upcoming races next month, […]

Day 62, Meal 148

I’m getting ready for my road-trip over to Cocoa, FL for the Space Coast Marathon tomorrow but first I need some lunch! I’m going with one of my leftovers, Whole Grain Linguine, Alfredo & Crispy Shrimp Fritta [Half] from Day 44, Meal 106. Here was the original meal: …and here is the remaining half, in frozen fashion: …and here it is, ready to eat after being defrosted in the microwave: This was REALLY GOOD, despite not looking nearly as pretty. The big weakness with the Alfredo-based sauces is how the sauce gets absorbed, BUT the flavor is still there, thankfully. This […]

Day 61, Meal 147

I hope everyone had a fantastic (and delicious) Thanksgiving yesterday. It’s Black Friday today, and I will NOT be participating in the shopping festivities. While I used to be the person who would literally camp out at the front door of stores for the best deals, I no longer have the ambition to save a few dollars in that manner. One would think, after seeing my crazy activities with my pasta adventures that I’d be all over that, but maybe when Olive Garden participates in the Black Friday spirit, I’ll come on-board. It’s lunch time, and I’m ready for leftover […]

Day 60, Meal 146

Happy Thanksgiving everyone! Today is a day I’ve been looking forward to for quite some time! I absolutely LOVE Thanksgiving, as it’s a great time to feast around the ones we love. Every year my father-in-law does ALL the cooking, so I get to sit back, relax and enjoy. While I’ll still be calorie counting with Lose It!, I will certainly be having a bunch of delicious food. I plan what I’ll be eating in advance, a strategy I like to use to try and prevent myself from over-indulging. I start off with a modest plate: After finishing this delicious plate, I […]
